St. Louis Community College student Shayne McCrady, who is the sauté cook/line cook at The Gatesworth in St. Louis, recently was named 2016 American Culinary Federation (ACF) Central Region Student Chef of the Year.
He received the title following a competition at the ACF Central Regional Culinary Salon held at Culinary Institute of St. Louis at Hickey College in St. Louis.
At the regional competition, McCrady prepared two portions of a main dish that incorporated the assigned protein, chicken, for a panel of judges in 1 hour, 40 minutes. He received a silver medal for his dish: pan-seared chicken breast, chicken reduction, potato “bar,” glacé carrots, pickled beets, sautéed mushrooms and broccoli three ways.

“To be named the regional champion is such an honor,” said McCrady. “All my hard work and time put into the kitchen has paid off. None of this would be possible without my coaches, friends and family giving me their advice and support.”
McCrady now is preparing to compete against his regional counterparts for the national title and $1,000 prize during Cook. Craft. Create. Convention & Show slated for July 15-19 in Phoenix, Ariz.
“Preparation will be the key to success for the national competition,” he said. “There will be many long hours, early mornings and late nights spent perfecting my dish. Most important is honing my culinary fundamentals by practicing cooking techniques and perfecting my knife skills.”
McCrady, who resides in Maplewood, graduated from STLCC with an associate degree in culinary arts in 2014. He will earn another associate degree in baking and pastry arts in 2016. He began studying culinary arts as a junior at North Technical High School and won silver medals at three competitions during high school.
As a member of the Cuisine Club at STLCC-Forest Park, McCrady was the treasurer in 2014 and president in 2015. He plans to work toward earning ACF certifications and continue to compete. McCrady is a member of Chefs de Cuisine Association of St. Louis Inc.
ACF Regional Culinary Salon Competitions are a part of ACF’s Signature Series, which provides educational and networking opportunities through ChefConnect events and competitions for culinary industry professionals and students.
